Tamal Panameño

Tamal Panameño is a traditional dish originating from Panama. It is a little diferent from othe tamales of Latin American countries and the Caribbean style.

The tamale in Panama is prepared with ground corn, which is cooked and ground, while the chicken and or pork is cooked with savory  sauce. One of the characteristics of the stew must be the color red. The stew contains tomato sauce, marinades, onions, peppers, and so on. Additionally, the dough is mixed with raisins, green olives, fried onion, achiote and peas. Finally, it is wrapped in bijao leaves and external banana leaves and steamed  or boiled in water for hours.

The Latin American tamales have many variations, but they’re often prepared with corn dough that’s mixed with raisins and some broth. Once shaped, the tamales are stuffed with meat such as pork or chicken. The filling also often contains many ingredients such as onions, garlic, bell peppers, tomatoes, olives, capers, and various spices, in addition to meat and raisins.
