Sopa de pata

Sopa de pata or caldo de pata is a hearty tripe and cow’s feet soup from El Salvador. It is also prepared with local vegetables such as chayote, corn, manioc (cassava or yuca), chili and tomatoes. It is spiced with oregano and cilantro, lime and scallion.

Sopa de pata is so popular in El Salvador and throughout Latin America that it even appears in some popular paintings. It is also a soup particularly associated with domestic and family Sunday cooking.

The addition of lime and scallion brings a lot of freshness to the dish. This Salvadoran soup is rich in contrasts because it contains different textures but also opposing flavors which nevertheless combine wonderfully between sweet, bitter, peppery, and fresh.
