Sao (saus)

Sao, sau or souse is a type of pickle made by fully cooking the meat and then marinating it for a long time in a solution made of fresh lime or lemon juice, vinegar, salt, minced hot pepper, onions and cucumbers. The dish can be made out of various parts of a pig, cow and chicken. Pork souse is typically made with porl legs, feet or knuckles and shoulder of a pig.

The boiled pork legs will be cooked with the celery and garlic salt, cutting the meat in pieces and put marinade made of  lemon juice and other ingredients to the meat with habanero pepper, cucumbers slices. Mix all the ingredients, cover and let stand at room temperature for 3 hours.. And add marinated red onions in apple cider vinegar to decorate a dish at the end.
