Ropa Vieja

Ropa Vieja

Ropa vieja is one of the national dishes of Cuba, but is also popular in other areas of the region such as Puerto Rico and Panama, in Spain, and in the Philippines. It consists of shredded or pulled stewed beef with vegetables. Ropa vieja literally means "old clothes" in Spanish. The dish itself is a mouthwatering blend of shredded beef stewed in tomato sauce, often served with rice or over tortillas.

Typically this dish is made with flank steak, which is lean and has long, shreddy fibers, and is how the dish earned the name “old clothes.” It’s the traditional choice of meat. This is a  simple  dish with a mixed taste of cooked beef and spices like black pepper, cumin, and oregano.
