Qurutob
Qurutob is a traditional vegetarian dish from Tajikistan that consists of layered fatir bread, qurut based sauce and vegetables. The dish is served on large qurutob plates. Sometimes with lamb or mutton.
The fermented milk or yogurt used to make the base of the sauce for Qurutob is qurut. It is a ball of fermented milk or yogurt curd that has been dried out to remove excess liquid and whey. They will be soaked in water, and the salty liquid is used to create the base of the dish.
