Provoleta
Provoleta is grilled Provolone cheese. In Argentina, a thick slice of provoleta, a provolone-type cheese, is cooked over coals until browned and bubbling, then served as a mouthwatering appetizer with bread, as an appetizer or side dish. For ease of preparation, provoleta can be cooked in a cast-iron pan, under the broiler or baked in a hot oven.
The provoleta may be seasoned with chimmichurri, a mixture of oils and spices, and is usually eaten communally with bread. A dab of chimichurri salsa is usually served alongside.
Stuffed provoleta (Spanish: provoleta rellena) is provoleta stuffed with assorted fillings that could include ham, barbecue sausage or morcilla blood sausage, cheese, vegetables, peppers and onions.
