Pollo encebollado
The Salvadoran diet is made from poultry and fish, vegetables, legumes, beans and other grains and dairy products. Mainly cheese and curd. Pollo encebollado is a delicious chicken with onion in the best Salvadoran style. An excellent alternative to serve as a main course for lunch. There are so many wonderful and different versions of this dish in Central America.
It pairs traditionally this chicken dish with a side of rice and tortillas with a few slices of queso fresco (or cuajada, a Salvadoran soft cheese, if you can find it), or mashed potatoes for it,is a little less traditional but equally as comforting.
