Picadillo de papa
Picadillos (potato picadillo) are a beloved staple of Costa Rican cuisine, traditionally made with diced vegetables, meat, and spices. The dish is popular in the highlands of northern Cartago, where they grow many potatoes.
In Costa Rica there are many recipes to prepare the “picadillo de papa”, and they are really easy to make. The most popular picadillos in Costa Rica are potato picadillo with potato, chayote, and vainica (green beans). Less common but also delicious is picadillo de arracache and green papaya picadillo.
The recipes and vegetables vary depending on where you are in Costa Rica, but all have the common denominator of vegetables chopped into small pieces with some meat.
