Fish Suruwa
Fish suruwa or also called Curry Fish Lolo is a delicious Fijian curry made with firm white fish, onions, tomatoes, coconut milk, chilis, and various spices such as cumin, garam masala, and turmeric. The suruwa is also popular Samoan dish.
Other Polynesian similar curry dish is Pawpaw Curry Lolo is an Indian inspired recipe of the South Pacific Fiji Islands, made with green papaya and coconut cream.
The Indian influence on Fijian cuisine is particularly prominent in this Fish Suruwa. Onions, chilies, spices (garam masala, turmeric, cumin), and tomatoes are simmered to create the curry base for the fish and the addition of coconut milk gives a creamy texture. Serve it with steamed white rice and top with a sprinkling of freshly chopped cilantro.
