Chtitha djaj
Algerian Chtitha djaj is chicken and chickpea tagine in red sauce . It is quite spicy, thanks to the dersa, the famous blend of garlic, spices and olive oil, which in Algeria, is a basic component of many meat, fish or vegetable dishes. The ingredients are seasoning and cooked in a clay tagine pot on the hob and finish by baking them in the oven.
This one delicious dish that is served with any type of bread. The sauce has to be thick and just enough to dip a bread in it and mop it up. The sauce is a combination of onions, garlic, mustard, balsamic vinegar, and cayenne pepper
Chtitha Djedj is also one of the dishes prepared and always served during the holy month of Ramadan.
Djedj means in chicken in Arabic. Chtitha is related to the world chtih, which in Arabic means dance. The anecdote behind this is that this dish is so spicy it makes you dance, and relates to all dishes starting with Chtitha!
