Chicken Karahi
Pakistani chicken Karahi or chicken Kadai is a popular North Indian and Pakistani curry, and you can find it in most restaurant menus. Often, the road-side dhaba’s will also have this spicy, restaurant-style and homestyle curry on the menu which is often enjoyed with hot naan, rice or tandoor’s roti.
The dish is prepared in a Karahi. That is a thick, circular, metal cooking pot, similar to a wok (pan) which is used in Indian cooking for curries, sautéed vegetables and deep frying. It can take between 30 and 50 minutes to prepare and cook the dish and can be stored for later consumption. Apart from chicken, the dish is made with various spices like red chili powder, cumin, garam masala, ginger, allspice, cardamom, tomatoes, and garlic. In North India the dish is cooked with bell paprika,too.
