Bife koygua

Bife Koygua is a Paraguayan beef stew that is loved throughout the country. The juicy beef cut sprinkled with grilled onions and  topped with fried eggs, garnished with chopped parsley, then served, typically with mandioca on the side.

The name of the dish is derived from the words bife, referring to the beef steaks, and the term ‘koygua’ comes from the Guarani language and translates as “shy” or “hidden”, as the beef is topped with sliced tomatoes after seasoned, and two eggs are cooked over the dish. The ‘bife koygua, then, is served under the runny eggs.
