Juane arroz

The Juane consists of  rice filled with meat, boiled egg, black olives, and spices. All the ingredients are wrapped up in bijao leaves (which look like banana leaves) and are plants from the jungle. It is then boiled as is in clay pots and served in its leaves.

Juane de Pollo or juane arroz is a variant of this dish. It is a Juane made with chicken meat. It was served with plantains and salsa con cocona, a salsa sauce made of onion and cocona (a yellow fruit from the jungle).

It is common to pair the dish with cassava or boiled bananas. Juanes can be found in traditional restaurants, in markets, or at street vendors.

The name juane refers to St. John the Baptist, because the dish is traditionally eaten on the 24th of June, during the feast of San Juan (patron saint of the Amazon). During the festivities, parcels of juanes are exchanged between family, friends, and strangers, with everybody coming together to help out with the preparation of this unique dish.
