Corvina frita

Corvina is Panama's most popular fish dish, it can be served fried, baked, or raw as ceviche. The Corvina frita or Pescado fritos panama is  this typical dish in Panama that a whole fried  sea bass. A similar dish, but with red snapper called Pargo frito is also a fried whole fish, very popular, too.

Fried sea bass is typically complemented by a side of patacones(fried plantain slices) or papas fritas (french fries),  yuca frita. Many restaurants will also include cut lemons and tomatoes to give the fish a little bit of citrus flavor. And a selection of different sauces to choose from.
