Bistec a caballo

“Bistec a caballo” literally means “Steak on horseback”. The dish is colombian steak with onions and tomatoes. The ingredients are very simple and very popular in Colombia,they’re simply steak, hogao, which is a tomato and onion sauce, and a fried egg.

The tender cut of steak is marinateda in oregano, garlic, cumin, oil, salt, and pepper. Let the steak rest this way for a good hour. Overnight is fine, too. Then grille the  flank steak, together with fresh tomato and onion sauce and sunny side up egg on top.  Served with cauliflower mash  or jasmine rice and plantains. The onions and tomatoes create a flavorful sauce which is wonderful served over rice.

You’ll find variations of this recipe in different South and Central American countries and regions. Some finely chop the tomatoes and onions, some use scallions in place of onions which is also delicious.
