Accras/Acras de morue” , the famous Carribbean dish from French West Indies, French Guiana  are small fritters made with salted cod (“morue” in French; fresh cod is “cabillaud”), flour and seasonings. These snacks are utterly addictive and easy to prepare; if carefully prepared, they will be crisp outside, soft inside and not greasy. Similar preparations exist in Portugal and Spain.

There are also Caribbean version, popular in mainland France where it is often served at parties.

Initially it was always prepared with salt cod but nowadays it can be replaced by any salted or fresh white fish. My recipe uses fresh white fish fillets.
